How GrillTime estimates cook time and doneness

Cooking time is an estimate. Thickness, starting temperature, grill temperature stability, airflow, and meat shape can change time dramatically. Use time as a planning tool and finish by internal temperature and texture.

Our baseline assumptions

Food safety and temperatures

USDA safe temperatures are a good starting point, but many cuts (like brisket) are cooked past “safe” for texture. For steaks, you may choose lower doneness levels if you accept the risk. Always use a reliable thermometer.

How to use the calculator

  1. Pick the cut and cooking method (grill vs smoke).
  2. Set thickness/weight if available.
  3. Use the time range for planning.
  4. Start checking internal temperature early; rest the meat before slicing.
